True lavender is a small shrub, 20-70cm tall, that grows in small clusters on the hills and low mountains of the Mediterranean coast. Thin, thin, downy grey-green leaves grow beneath the purple flowering branches. The flowers grow in clusters in oval spikes with pointed tips. The Persians, Greeks and Romans burned lavender branches in sick rooms and during epidemics to protect themselves from the "bad smell". The Romans also used lavender to scent bath water. Hence the word "lavare", which means "to wash", comes from Latin. In Scandinavia, lavender branches were also used to make smoke in the homes of plague patients. To protect themselves from epidemics, they prepared herbal vinegar containing lavender and soaked cloths in it and applied them to their mouths and noses.
